Here is what you need: (Remember I have a large family. You can adjust it to your liking.)

  • Chicken. Cooked and cubed. 3 breasts.
  • Cream cheese. 2 containers.
  • Croissants. The tubed kind. 5 of tubes.
  • Cream of chicken soup. 3 cans.
  • Greased cookie sheet.
  1. Preheat the oven to 425.
  2. Mix together cream cheese, soup, and chicken in a bowl.
  3. Spread out the croissants.
  4. Scoop some of the filling onto the croissant.
  5. Roll them up.
  6. Pop in the oven for 11-13 minutes or until golden.

Tada. Soooooooo good. Variation: Instead of croissants, use pizza crust. Throw in the crust for a few minutes before  using the filling as the toppings, or the dough wont cook all the way. Again, sooo good.

I know that everyone has their preference. Some say Nathans are the best. They are delicious. I think it would come in at #2 on my best freakin’ hot dog list. But I have to say that that #1 hot dog is:

HEBREW NATIONAL!!!So delicious. So juicy. So kosher. Just add some mustard and some onion, and you couldn’t come closer to heaven on earth. Take it from a fat girl. We all love a fat Jewish wiener. ;)

Tried making the dot cookies today. They didnt turn out the way they are suppose to. Dont get my wrong, they are delicious. Well they were. They are gone. But they didnt look quite right.

Doesnt look too bad, right? WRONG!! You should know how big this cookie was. It was bigger then my palm.

I tried again. It was a little better, but not quite.

So does anyone know how to bake these cookies- to make them bake up and not out? to encircle the little kiss? Let me know! Thanks!!

What you’ll need:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon powdered vanilla
  • 1 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1 bag Hershey’s chocolate kisses, unwrapped
  1. In a mixer with paddle attachment, cream together butter and sugar. Add the egg and vanilla; blend, scraping down sides. Add the flour, baking soda, and cream of tartar. Blend until combined. Chill dough.
  2. Using chilled dough, make about 8 2-tablespoon-size balls. Spread out on cookie sheet.
  3. Push a chocolate kiss into each dough ball.
  4. Bake at 350*F for 6-8 mins until barely golden around the base of the cookie. Let cool on the cookie sheet before removing. Repeat with remaining dough until all the kisses are gone.

Variation: Melt white chocolate, butterscotch, mint, or peanut butter flavored chips in the microwave according to package directions. With each cookie ball, push an indentation in and fill with melted chocolate. To make Thumbprints, fill each indentation with jam. Bake accordingly. If allowed to eat nuts, roll each cookie in finely chopped almonds or peanuts before baking.

Serves 12

What you need:

  • 3 ripe bananas
  • 1 cup sugar
  • 1/2 cup butter
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 2 cups flour
  • 1/2 cup chopped pecans
  1. In food processor, blend bananas, sugar, butter, eggs, and vanilla. Add remaining ingredients and process until smooth.
  2. Pour into desired baking pans and bake at 350*F until firm. (Mini-muffins: 6 mins; regular tins: 10-15 mins; mini loaves 15 mins; bread loaf: about 60 mins)
  • Dairy free: Use Margarine.
  • Egg free: Omit eggs and use one extra banana.
  • Low Sugar: Omit Sugar or add 1/4 cup honey or sugar substitute.
  • Nut free: omit pecans.

What you need:

  • 1 cup butter
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 2 tablespoons corn syrup or maple syrup
  • 4 cups oats or buckwheat flakes
  • 1 cup shredded coconut
  • 1/3 cup chopped nuts
  • 1 cup chocolate chips and/or favorite dried fruit
  1. Grease a 12×9 inch cookie sheet.
  2. In a large pan, heat butter, sugars, and syrup until melted.
  3. Stir in remaining ingredients until easily combined.
  4. Spread on cookie sheet and press down, making sure the surface is smooth.
  5. Bake in a 325*F oven for 30 mins.
  6. Cool for 20 mins, then cut into bars. Transfer to a cooling rack and cool completly.
  • Serves 12.
  • Dairy-free variation: Use Margarine.
  • Nut free variation: Omit nuts.

Yesterday in the newspaper, we got some coupons for FREE cat food and dog food. I picked it up at the store today.  I dont have a cat. I do have dogs, but I dont feel them wet dog food. Plus it was just one can.  Why in the world would I do this? Is it just to bring them man down? Get something for nothing? No. We are taking the cans to our local animal shelter.

They are always in need of something. Last year we took all of our old blankets and towels in. The dogs dont care if they are stained. They cats dont care if that beach towel is half the size it used to be. They just know they are comfortable. I wish I could take all those little dogs and cats and give them a good home. For now, I will settle with making them a little happier.

  • I went to work at 9. I got up around 730. Well, no thats not true. I woke up at 730 and got up around 8. I blogged until 830, took a quick shower and was off to work.
  • Came home at 330. Blogged some more. I think I may be addicted. I ate around 4, and blogged.
  • Watched a little Harry Potter. It was on tonight on HBO, I think.
  • I cut my dogs hair. I have a Havanese dog. She is a little fru-fru dog. She refuses to potty train, so we keep her outside. She likes being outside, as there is alot of dirt for her to roll in. Did I mention she is white? She gets knots in her hair soooo bad. She wont let me shave it, cuz shes a spaz and doesnt like the noise the clippers make. So I had to do the whole thing with scissors. She did pretty well. I took her in the front yard and cut it there on the lawn.  She only tried to crawl away a few times. Before hair cut. She was a MESS. But cute as a button.
  • Ate dinner. While I was cutting her hair, my husband cooked dinner. We had frito salad. Delicious!
  • I watched a movie. License to Wed staring Robin Williams and Mandy Moore. Pretty cute movie. Total chick flick.
  • Cleaned up. Mostly I told my kids to pick up thier stuff. I paid little M 20 cents to pick up. He got excited, even tho it was paid in pennies. (Im not always cheap. Thats just all I had on me. He got $1.01 earlier for finding daddies watch.)
  • I’m now blogging again. I think I may have to go to BA meetings.

What you’ll need:

 

  • Salad mix (You can use regular cut up lettuce, too)
  • Hamburger meat (we usually mix it with onions and a packet of taco mix, but you can do it however you would cook taco meat.)
  • Fixins: Tomatos, green onions, onions, cheese, etc.
  • Refried beans. (optional. I am picky and dont add them. Family does. It does make it more filling)
  • Fritos.

After cooking the meat and cutting up all the fixins, you mix a small amount of everything in a bowl. Totally easy. You can add taco sauce if youd like. Mix it all up and viola!! Frito Salad! So easy and so yummy.

Today we went to the Home Depot and picked up some potted veggies. We are already growing corn, green onions, lettuce, radishes, and attempting cucumbers (they arnt coming in yet).

We picked up some Jalapenos, cherry tomatos, bell peppers, and japanese cucumbers. I cant wait until they are ready to eat!! If you look close, you can see a bell pepper starting to grow. So exciting.
